Caroline & Raffaela have come together to share their passion for Italian Cuisine
Caroline has 20 years Hospitality experience in both Front and Back of House. She is a qualified industry Chef and Trainer who has worked extensively in the UK, Europe and Australia in establishments such as the Sheraton (Sydney), Hyatt and Intercontinental Hotels (Adelaide CBD).
As the Head Chef of the Ministry of Defence, Officers Mess in Worthy Down, Winchester UK, Caroline lead a team of 10 who cooked for Queen Elizabeth 11 and her entourage when she toured the facility to commemorate the anniversary of the base.
Caroline has organised and catered for a variety of functions ranging from 20-650 guests.
She was the personal chef to the 8th Earl of Lisburne at his Welsh estate and has worked freelance for members of the Cadbury and Heinz families.
Caroline brings with her a wealth of experience and knowledge of catering and hospitality skills. More recently Caroline was involved in assisting with the development and rollout of a school based Hospitality Trade Centre. Caroline has also been involved as an industry volunteer to mentor young industry apprentice chefs.
Raffaela Del Vecchio
With an impressive business resume of over 34 years management and organisational development experience, Raffaela brings a wealth of knowledge and capability to Insieme.
During her extensive periods of study, she worked “hands on” in the hospitality industry both locally and internationally. This has now led her to join with Caroline and follow her passion of opening a restaurant.
Raffaela is of Italian heritage and has extensive knowledge and understanding of regional cuisine.
